While we're at it, here are my Top Tips™ for soft and fluffy scrambled eggs:
- People say adding a splash of milk makes for fluffy & soft eggs, but all you really need is to aerate the eggs well. Put your arms into it! A whisk is helpful, but I prefer to use a fork (like my mother taught me). You'll know the eggs are well whisked when they're frothy and bubbly.
- The pan is ready when a cold stick of butter from the fridge melts and froths on contact with the pan.
- Don't wait for the eggs to set in the pan! Overcooking is easy, and will lead to dry/rubbery eggs. When the eggs are 70% set, take the pan off the burner and let the residual heat finish the job.
- Plate and enjoy ASAP!
